Hillbrook is a small family owned vineyard in the Pemberton Wine Region of Western Australia. We strive with our white wines to achieve quality but with an ‘easy drinking’ style redolent of picnics or long afternoons sitting on the verandah with friends in the Australian summer.
Our Wines are made the traditional way, hand pruned, hand picked, open fermentation, hand plunged, basket pressed, matured in a range of French and American Oak for 12-24 months. Our philosophy is low touch with the best inputs. The results are concentrated wines with regional and varietal characters.
